Dialed Up builds upon the foundation of our series of Double IPA’s brewed with grape must, Dialed In. For this special release, we bumped the ABV all the way up to 11% and massively dry hopped the beer with Galaxy and El Dorado. Pouring a heavily hazy light orange, this Triple IPA offers an enticing nose bursting with tropical aromas of ripe papaya, fresh mango, dank citrus peel and white wine. The palate builds in intensity as waves of bright, mouthwatering meyer lemon, orange, watermelon and pineapple converge with a beautiful vinous profile of key lime, pear, and white peach from the mid-fermentation addition of Pinot Gris juice. With a soft, creamy mouthfeel and medium body, Dialed Up Pinot Gris’ smooth finish balances its sweeter tropical notes with a moderate and enjoyable floral bitterness.

16oz can, Trillium snifter glass. Cloudy golden darker yellow body, one finger white head, great retention (for a high ABV beer, that is), not too much lacing. Smell is massive grapefruit and white grape juice emanating from the can as soon as I've popped the tab. Wow. Big grapefruit, herbal spice, tropical fruit, grape juice. It's matched by a fairly mild but robust caramel. Slight stone fruit accent. Flavour follows, smooth combination of big hoppy flavours including tropical fruit, papaya, mango, grapefruit and a bit of herbal spice. Moderate caramel. Fair bit of mild alcohol heat typical for a 11% TIPA. Big flavours, well-integrated. Mouthfeel is medium full bodied, good carbonation, mild alcohol heat intermixed with big herbal spice from the hops. Delicious triple IPA. Everything Trillium does except on a double dose of steroids.

Dated 4/5/19 on the bottom of the can, a hair over two months since brewing.
Pours an extremely murky dark gold with two fingers of thick creamy off-white head. Nose of mango, papaya, orange peel, wheat, white grape skins, peach and a slight dank herbaceousness. Taste is like a fresh tropical fruit pie made with whole grain crust. Notes follow the nose with extremely tropical with additional notes of candied lime and overripe honeydew melon. Small knock on the taste from a slight alcohol presence in this 11% brew. A little bit of sour kick from the pinot gris, medium+ luxurious body, low+ bitterness, medium+ sweetness. A big brew that doesn't mess around in aroma, taste or body, even two months out it's still throwing punches. Love it!

Pouring from a 16 oz. can into a Trillium Willi Becher style glass, this beer pours out hazy and a dark orange/almost caramelly color with brighter highlights. It forms over a finger worth of burnt lemon colored bubbles to rest on top.
The nose brings a definite juice aspect with an alcohol burn and a lingering sweetness.
The taste and feel comes in with the syrupy, triple ipa sweetness. Caramel and honey take over while the juice plays the background. Smooth for a triple, but you can tell it’s made of something. Soft and creamy while providing a syrupy thickness.
Overall, this is a BIG ipa that mixes a huge sweetness of honey and caramel with oranges and papaya fruit. It’s smooth, creamy, full & thick with syrupy greatness.

L: deep dark orange almost leaning to a slight blood orange/ reddish. A finger of white foam that fades fast
S: deep citrus notes of oranges and tangerines but not a huge aroma
T: muted citrus like the nose and a hint of grapes. Starts sweet but finishes slightly bitter and dry

Supremely cloudy with a light amber color moderate head which blankets the glass after each sip.
I get a lot of spent mashed grain to the nose. It's like wet pale barley malt. Attractive but it leads me to think this beer is unfermented, but at an 11% abv, I know better. In the background I get some orange creamsicle with a touch of maraschino cherry.
The taste still retains a lot of the wort feel although it's only slightly sweet. The hop resonates throughout the tasting. While strong it doesn't dominate. The alcohol warmth is particularly acute in swallow and aftertaste. The feasibility graininess also remains throughout the tasting. A very interesting beer with an unconventional flavor profile.
