The classic coffee cake is richly textured with a spongey center, delicate crumb, and crunchy topping. Brewed with Barrington Coffee, Madagascar Vanilla Beans, Lactose, and Vietnamese Cinnamon, we created an imperial stout that offers layered complexity reminiscent of its namesake treat. 14 months in select bourbon barrels allows for even more depth than the base beer.
Pouring a viscous, deep black, Barrel-Aged Coffee Cake announces its presence with a profound blend of aromas. Baker's chocolate, fresh-roasted coffee, and cinnamon greet the nose upfront. Secondary notes of brown sugar, freshly-emptied bourbon barrels, and molasses weave in and out on the back of the palate. A welcomed sweetness enhances the creamy mouthfeel for an indulgent drinking experience.

750 mL bottle. Black. Smells of cinnamon, bourbon, and sweet chocolate. Tastes of cinnamon, bourbon, coffee, and sweet chocolate. At least it's consistent. Boozy. Big and sweet. Surprisingly good.

Obsidian black with a short but creamy dark tan head settling to a thick collar.
Hoo buddy. They really should have just given up on this label and renamed it because this became BA Vietnamese Cinnamon stout, no joke. It's a god damn cinnamon overload, and of the super spicy Vietnamese variety that comes a little too close to Red Hots for something that's supposed to be more of a delicate collaboration between cakey bread and brown sugar. There is a hint of semi-bitter cacao, and a little funky brown sugar on the exhale, but no coffee.
The body is moderately silky thick, with some sticky barrel heat but no flavor contribution, which only amplifies the spice of the cinnamon.

Good balance of fresh cinnamon, creamy vanilla, and coffee with coffee cake notes, bourbon, oak, caramel, mapley molasses, toffee, caramelized brown sugar, dark chocolate fudge, with some earthy herbal hops.

Served in a tulip
The beer poured an insanely viscous and oily total pitch black. A thin, saddle brown film topped the body, but it quickly dissolved. No head nor any lacing whatsoever.
The aroma was fantastic and totally reminded me of coffee cake. Cinnamon came through big time. Vanilla and sweet cream notes were also apparent. Lots of brown sugar as well. Sweet bit not excessively so. Rich dark malts were noticeable too. Hint of booziness but definitely not as much as I had anticipated given the beer’s super high ABV. As the liquid warmed, the cinnamon and vanilla notes intensified. There was an interesting herbal quality as well.
The flavor profile was also fantastic. Super rich and complex. The cinnamon again was really intense. Loads of vanilla and sweet cream in the center. Strong brown sugar notes too. Malty and robust from start to finish. Nice melding of roasted and sweet caramel malts. Hint of espresso on the back end. The beer finished with a bit more roastiness and subtle boozy notes. Unfortunately, the barrel was hardly detectable.
Terrific rich, thick, full bodied mouthfeel. Super creamy, oily and dense. The liquid contained a finer bubbled, somewhat subdued effervescence that fluffed up beautifully as it moved along the palate.
Trillium’s Coffee Cake was fantastic, and this barrel-aged version reminded me of a slightly boozier take on the original. Perhaps the upside of the bourbon being relatively subtle was that the alcohol was hardly noticeable.
