New Year's Resolutions are always hard to keep, particularly when Dry January is involved. It's time to reward your resolve with a beer whose arrival we've been patiently awaiting. After 12 months in bourbon barrels, our brunch-inspired imperial stout is ready. A collaboration with Burgundian Waffles and Barrington Coffee, Barrel-Aged Resolution Break is brewed with Liège-style waffles, Barrington's Trillium blend cold brew coffee, Belgian Pearl sugar, Madagascar vanilla beans, and lactose.

Presenting a glass-coating shadowy black, the fresh-ground coffee notes are the first to make an appearance once Barrel-Aged Resolution Break is poured. Layered aromas of fudgy dark chocolate, molasses, spongy waffle, vanilla, and bourbon-soaked oak weave in and out across the palate. Registering a touch above medium-sweetness with a velvety mouthfeel, BA Resolution Break is built to be enjoyed alongside Sunday brunch preparations.

Bottle from Fort Point in Boston purchased on the weekend of EBF 2020. Pours black with tan head and boozy lacing, smell is bourbon, sticky toffee cake, molasses, hints of coffee, vanilla and powdered sugar, taste is sweet bourbon chocolate, coffee, hints of vanillay waffle, this beer is incredibly viscous. Definitely like drinking a bourbon coffee soaked waffle.

Poured from a 750 mL bottle into a trillium tulip glass. Purchased at the Canton brewery.

Pours a deep brown body with a one finger brown head that reduces to leave spotty lacing and a ring of retention.

On the nose it’s spot on, Belgian waffles, French vanilla ice cream, caramelized sugar, molasses, bourbon soaked tiramisu, milk chocolate, like walking into a bakery.

On the tongue it’s super sweet with rich, bourbon soaked vanilla-chocolate cake, caramelized sugar, vanilla bourbon ladyfingers, boozy milk chocolate cake, finishing super sweet, Belgian candy sugar. Rich body, definitely a sipper to be enjoyed over hours.

One of the best trillium barrel aged stouts I’ve had, insanely accurate flavor profile and super tasty.

Poured jet black with no real head retention or lacing. The beer is sticky though on the glass, very boozy looking. The smell of the beer has a bold barrel aroma along with some booze and dark malts. The taste is a little spicy and sweet, there is some definite heat in there coming from that 15.3% they'll pulled off. It's got a nice thick body, smooth and rich. Overall a massive beer from Trillium but also very expensive.
