Coconut Cake is the dessert we crave when the weather is hot! The base version was originally released in 2019 and nearly two years later, the Barrel-Aged expression of this rich, yet refreshing Imperial Stout is ready to be enjoyed. Aged primarily in Rum barrels, with a smaller percentage of Bourbon barrel-aged components included, the resulting final blend is rich and decadent, yet deceivably drinkable.
Brewed with toasted coconut and Madagascar vanilla beans, Barrel-Aged Coconut Cake presents an opaque black color with a mocha foam cap. Indulgent chocolatier aromas lead the way. Sweet, candied coconut, dense fudge, creamy vanilla, and rum-soaked oak staves make for a complex and supremely satisfying experience throughout. Medium-bodied, with a glass-coating viscosity and gentle alcohol warmth, each sip leaves the senses highly rewarded.

Dark brown bordering on black appearance. Thick and oily but not as viscous as I anticipated given the ABV. The liquid was topped by a thin, frothy, mocha colored crown that quickly dissolved. There was no lacing whatsoever. After every sip, a steady stream of legs cascaded down the sides of the glass.
The nose was fantastic. Super rich and smooth bourbon notes dominated. Boozy but not excessively so. Roasted malts were apparent. Fragrant vanilla notes also came through strong. Bit of chocolate fudge too. All in all, moderately sweet though definitely not as much as I anticipated.
The flavor profile was also fantastic. Roasted malts appeared up front before the bourbon notes kicked in. Even though the bourbon presence was intense, the booze was surprisingly subdued, especially given the super high ABV. Brown sugar was also noticeable. Vanilla icing came through in the center. More booze and bourbon on the back end and the finish.
The mouthfeel was also terrific. Rich, oily and viscous. Full bodied for the style. The liquid contained a fine, subdued effervescence that worked perfectly.
Barrel-Aged Coconut Cake is an outstanding pastry stout. Even though I picked up absolutely no coconut, the bourbon and vanilla notes provided the perfect accent to a fantastic base beer. Unlike many high ABV takes on this style, this was surprisingly well balanced and quite drinkable.

On tap. No head. Oily black. Thick.
Great combo of coconut, vanilla, and milk sugar. Sweet, but the barrel cuts it nicely. Warming bourbon, oak. Fudge. A dessert beer, but very enjoyable. My 5 oz pour went quick.
