Situated on an idyllic farm in Salem, CT just 30 miles from the Trillium Farm, lies Fox Farm Brewery. For our first collaboration together, we leaned heavily into shared values, highlighting two small, local maltsters that each brewery has worked with extensively.

To allow for this special grain to shine, we brewed a Pale Lager with just a touch of modern flair, achieved with a very subtle dry-hop of Motueka. // Brewed with pilsner malt from both Valley Malt in Hadley, MA, and Thrall Family Malt in Windsor, CT, Thresh presents a brilliant pale color, with lively carbonation rising to an off-white head.

The aroma presents clean, malt-derived notes of baked biscuit, rising bread dough, and lightly toasted grain. The gentle hop addition offers a fleeting highlight of key lime and zested citrus, with some floral undertones adding complexity. Dry, crisp, and light-bodied, this 5.0% Pale Lager finishes with a highly refreshing bitter snap.

STYLE: Pale Lager

Big thanks to my friend Bill for hooking me up with this beer.

A fluffy, two-finger tall, bright white plume rose above the crystal clear, golden yellow body. The head slowly dropped to a lasting cap of foam. There were a few steaks of lacing along the glass, but they dissolved rather quickly.

The aroma was outstanding. It was super crisp, bright, snappy and clean. Grassy hop notes came through big time. Loads of fresh lime zest as well. As the beer sat, some biscuity malt notes appeared. Bit of cereal grain character too. Later, fragrant, fruity hop notes were detectable.

The flavor profile was also excellent though more bitter than I anticipated. Bright lemon notes came through strong on the front end. Biscuity malts were apparent here as well. Lime zest was noticeable in the center. Moderate amount of bitterness. As the beer moved along the palate, earthy hop notes appeared. The hops intensified and turned more piney and bitter on the back end and in the finish. On the second pour, soft, juicy, fruity hop notes came forth. This was likely from the Motueka dry hopping.

Excellent crisp, lively mouthfeel. Medium-full bodied for the style. The liquid contained a fine, zippy effervescence that fluffed up really nicely on the palate.

Trillium and Fox Farm are two of my favorite New England breweries, and their first collaborative beer was fantastic. Moving forward, I hope to see both of these breweries release more dry-hopped lagers like this one.

Nearly clear with only the faintest of hazes. The color is dirty blonde. Minor bar-poured head that retains a film of bubbles. Decent lacing of thin streaks and a smattering of spots.

Strong corn adjunct aroma. Background pale malt that’s similar to a Helles.

Stronger carbonation but with a richer body than expected. The corn is much lighter on the tongue. Here, the malt comes forward along with a sizable hop bite. Well balanced overall with a slowly building bitterness. Moderate length aftertaste.

The beer pours a voluminous white and foamy head that dissipates fairly quickly. The beer itself is a clear medium gold that looks good.

The smell is good. It has a honey sweet maltiness alongside an herbal hop note.

The taste is good. It has a light bitter and herbal hop note but the honey sweet, toasted and slightly toffee malt forward notes dominate the hops fairly easy.

The feel is good. It has a mostly clean feel but feels a bit thick for the style. It has a tingling carbonation to it.

Overall, this is a pretty good beer worth getting and relaxing over. The flavor is good even though the feel is a bit heavy.

06/30/23. Poured into a Samuel Adams Perfect Pint.

A: Clear honey-gold with 1-2 finger white foamy head with good retention and decent lacing.

S: Lightly grassy sweet maltiness with a lot of lemon-lime

T: Malty up front with a lighter toasted note on the back of the palate in the finish. Hops are prominent through the mid-palate and finish with lemon, lime, and lighter herbal character. Light bitterness and clean.

M: Light body with crisp feel and mildly dry finish.

O: A clean lager with a little extra lime punch to provide a bit of an interesting twist.

On tap:
A nice looking pale golden, clear body with sustained white head and lots of lacing. To me, this beer it mostly malt-driven, with barely noticeable floral hops weaved in. It lacks for interesting notes when cold, but opens a tad as it warms. The malts go from dry cereal to dry white bread; the flowers of the floral notes gain a little bit of their stems. There’s a slightly metallic note/feel in the back of the taste from start to finish. It grew on me a bit over time, but I’m not really enamored with this one.

Can pour into a taster glass.
Pale yellow color with a bold white head. Bread, wheat, dandelion tones on the nose. Fruit and hop oil added to the palate. Light to moderate mouthfeel, crisp, and lively.
