An American twist on a Nordic style, our Sahti is brewed with fresh juniper branches foraged from our armwoods just after the epic snowstorm in late January. This golden-straw colored beer has a big nose of freshly peeled citrus with some whiffs of evergreen from the juniper. Almost no hops were used in this beer, only a touch of Sterling along with some herbs and spices including grains of paradise. Two different yeasts were used to produce a distinctly earthy, citrus and funk combo not found in the malts. The 15 IBU count is appropriately low.
