A mosaic offering with one component consisting of a Saison brewed with fresh kumquats & calamansi from Flavors by Bhumi and fermented in stainless with a single Saison strain as well as the infamous Dirty Dozen blend of 12 different isolates of Brettanomyces both from our friend Al at East Coast Yeast. The second component made up of a Saison laid to rest for a year in a Chardonnay barrel from Wattle Creek Vineyard with our house mixed culture. Both were blended together with a bottle conditioning of fresh Brettanomyces anomala. This liquid has an acidity that is medium, a dryness that begs another sip, an exotic citrus lean, and a hallmark back note of tropical pineapple.

Pours a very clean and transparent light yellow color, filled with bubbles swirling upwards, thin bright white head. Keenly penetrating nose of brett, vinegar notes, the oak presence adds to the bite rather than soften, the kumquat scents clear enough, pineapple and passion fruit too, quite forceful with little opportunity to relax and soak in the aromas. Medium-bodied, firm with a steady, muscular carbonation. Witheringly sour and the barrel aging very pronounced as well vanillin. The tropical fruit tends to meld into one big sour haymaker punch. Close to volatile, leaves your teeth vibrating. Admire how it bristles with energy but difficult to take more than a few sips without taking a break.
