Our native yeast culture matures slowly to fully express its character. Jupiter is aged for at least 6 months, resulting in a wonderfully carbonated beer. It boasts expressive notes of coconuts, pineapples, barnyard, orange blossom honey, and white flowers, reminiscent of aged Trappist ales.

6 oz draft pour at Lures Bar & Grille. It's kind of a strange idea to wild barrel age an imperial IPA, and the end result is pretty muddled. There's a surprising sweetness that clashes with the barrel and wild yeast notes, and the bitterness of the IPA base doesn't work for me with the "coconut" and "pineapple" flavors. Overall, not undrinkable but also not very enjoyable.
