Dry-Hopped Sour-Mashed Berliner-Weisse Brewed w/ Clementine Zest and Juice
How do you make a beer taste like a mimosa? I think we accomplished it. We brewed this beer with large portions of Wheat and a touch of Pilsner malt. The beer was sour mashed for over 48 hours to drop our PH to 3.6. In the whirlpool we added over 3 lbs of Clementine zest and juice as well as citrus forward hops. Post-Fermentation we dry-hopped with over 2 lbs per bbl of Zythos to bring in pineapple and orange flavor to the mix. We hope you like this beer as much as we do.

Poured into a stange, the appearance was a ruddy semi-milky looking yellow color with a fizzy to foamy cap of a little white head quickly settling down nicely. The aroma seemed to blend some sweet clementine pulp and juicy bitterness hitting upon some orange zest and then the sour effects of the "soured wheat." The flavor blends sour to sweet and brings about some tart then the pulp. Really nice blend that leads on into the aftertaste and right on into the finish. On the palate, this one sat about a light to medium on the body, perhaps more towards the lighter side. The citrusy fruitiness added to this helps to cut down on the acidic feels along my tongue. Overall, nice Berliner Weisse well worthy of having in the Summer.
