When it comes to brewing we love to work with complementing flavors. When we received a fresh and super dank shipment of Azacca hops that was throwing massive amount of pineapple flavor and aroma, we decided to brew a beer based off that. Playing on the theme of roasted barley and hops in a black IPA we took around 40 lbs of pineapple and lightly grilled it over hardwood. This slightly caramelized and charred fruit was then added directly to our primary fermentation. We hopped this beer heavily with Azzaca and then dry-hopped it liberally with Azzaca as well. It's like a cross between a fruited stout, an IPA and a porter. It's perfect for warmer weather and we think you'll enjoy it.

Poured into a becher pint glass, the appearance was a dark brown close to black color with a nice looking finger's worth of eggshell white foamy head that slid off at a moderate pace. Ample amount of semi-clingy foamy lace ran here and there while falling off fairly nice.
The aroma had a nice blend of roasted coffee beans, roasted barely, cocoa powder, dark chocolate nibs, and then some sweet crushed pineapple along with a little bit of char to ash-like character.
The flavor presented a stellar combustible sweet ash meddling with some of the coffee beans, pineapple and sweet wood. Dried earthy note fitting it's character in there and then a sly little aftertaste of the coffee, pineapple and sweet wood.
The mouthfeel was about medium bodied with a nice sipping quality about it. Not as "palate wrecking" as most of it's style tends to be, but I'm fine with that. That pineapple sweetness seemed to pull back on the dryness yet not become cloying - just a well rounded overall semi-smooth feel with the ABV feeling right where GM said it would be.
Overall, for a black IPA I have to admit - I may have liked this more for me, but it is quite different for the style yet coming across well brewed.
