High Ryse is our tribute to the constantly changing skyline of NYC. This ever-evolving brew goes through an initial fermentation with Brettanomyces and then finished with a classic saison yeast. Initially, expect a crisp, hoppy rye ale with traditional Belgian character. Further cellaring will allow the brett to develop its classic farmhouse flavor.

A: The beer is slightly hazy yellow in color. It poured with a three finger high off white head that has excellent retention properties, dying down a bit but leaving a big mound of bubbles in the center and lots of lacing down the sides of the glass.
S: Moderate aromas of rye and yeast are present in the nose along with faint hints of funk.
T: The taste follows the smell, starting off with lots of flavors of spicy rye along with other peppery spices imparted by the yeast. Slight bits of funk are present in the finish.
M: It feels light- to medium-bodied and a little dry on the palate with a moderate amount of carbonation.
O: This saison is doubly spicy—both from the rye and yeast—but might need a little aging to let the Brett develop.

The beer comes in a medium gold color with a big fluffy white head.
The aroma hits of earthy Brett, tropical fruit with nectarine, pineapple, orange zest, tangerine, yeasty bread.
The flavor follows with more of that fruit flavor of dried orange peel, more stone fruit, a light crackery malt, onto a hugely earthy and dry Brett finish. Hints of dry hay and a bit of rye spice lingering on the finish. This beer is incredibly quaffable with its gentle body, dry finish, and lively carbonation.

Huge head that settles in lumps. Cloudy with a whitish yellow color.
Mild pale ale start. Some sourness in the nose.
Very pale malt start but it becomes sour quickly with bitter ending. This continues through the finish and aftertaste. Very thin body with a muted level of carbonation.

The appearance is slightly hazy, head retention is unreal! The aroma is evident of Brett, super tropical. The taste is reminiscent of citrus hops. The dry body ties the aroma and flavor together and brings the beer together. Great new beer on the market.
