750 mL bottle into a teku glass
Clear, deep apricot colored brew with wafts of unripe nectarine and lemon, gentle oak. Flavors are pretty straightforward, like nectarine and lemon squeezed into sparkling water. Probably not as complex as the brew had hoped, but held up well in Nate’s cellar over the years. Cheers!

solid stuff, really sour, but not my favorite from pure project so far. i expected this to be a little bit more like a lambic, more wood, more funk, and somehow more refinement, not that this is amateur or anything, but it just didnt quite have the depth, complexity, and fruit prominence that i was hoping for. the bottle is absolutely gorgeous though, and the beer has a bright light orange color to it with a soft fog and a rising white bubbly head. it smells like soured nectarine, i think i can identify the fruit as not a peach or an apricot but quite clearly the nectarine, the skin tang to it i think defines it for me. there is a ton of bacterial pucker here too, light new oak tannins, and a mild but obvious cheesy profile, id like to replace this with a mature ambient bretty funkiness, but its not to be. the fruit is less forward in the flavor, fermented down a little too much maybe, or perhaps run off by all the acid in here, this is sharp and intense and astringent, drying, and even harsh at temperature. there still is the fruit here, but its a thin and simplified version of itself compared to the nose, and its just not as good overall as i wanted it to be. i like these guys, and i like this beer, but it let me down a little bit. too sour to appreciate any nuance, i guess thats the crux of it...
