Collaboration with Finback Brewery

We took a plunge on this collaboration with our friends from Finback Brewery in Queens, NYC, and we brewed up a crazy drinkable Murky Double IPA. Organic grapefruit and smoked sea salt combine with the fruity notes from Citra, BRU-1, and Mandaria Bavaria hops to activate your aroma sensors, and leave a delectably smooth tropical flavor on your tongue.

Putting the focus squarely on the flavor of citrus but the body of New England styled IPA, the collaborative IPA of Pure Project and Finback breweries ensure a strong citrus flavor with organic grapefruit additions and the spiciness of smoked sea salt. Hopped with Bavarian Mandarina, Citra and Bru-1 hops and the citrus deal is sealed.

Songs of the Deep pours with a tarnish lemon gold. Its turbid haze offers the appearance of straight grapefruit juice. Juicy aromas spill from the ivory froth with the expected dominance of citrus along with a backdrop of herb, tropical fruit and leafy greens. Moderately sweet, a light breadiness fuses with honey and fructose impressions for a pastry-like taste of key lime and meringue.

The sweetness dissolves gradually over the middle palate and allows the hops to shine. Its strong grapefruit impressions are paramount, however the taste of lemon and tangerine mingle slightly behind. Under ripened tropical fruits of kiwi, passionfruit and pineapple trail just before a late palate of fresh grassiness, a leafy bite and a peppery herb flavor comes with a medium level of bitterness.

Medium light in body, the ale never seems salty nor smoky, but the saline spice adds a roundness to the grapefruit additions and a peppery flavor to a tea-like finish of sassafras, verbena and bright green tea. A medium length aftertaste brings a mild hop derived astringency that accompanies an outlasting grassy bitterness and fruit skins.
