Corylus is our luxurious bourbon barrel-aged imperial stout infused with a trio of adjuncts that make it an unforgettable Pure classic. The sixth batch of this velvety, full-bodied brew rested in Cutwater Bourbon barrels for 16 months and Weller Bourbon barrels for 18 months, establishing a unique complexity. Organic toasted hazelnuts, organic Peruvian cacao, and Brazilian coffee enhance the sipping experience, forming decadent flavors of dark chocolate fudge, hazelnut gelato, and inky espresso that leave a lasting impression on the palate.

I tried this side-by-side with the Holy Mountain King’s Head - BA w/ Coffee and Hazelnuts, as they both have coffee and hazelnuts.

Look - Pours a dark black with a light head that disappears in under a minute.

Smell - Hazelnut, coffee, and cacao.

Taste - Hazelnut, coffee, cacao, and bourbon.

Feel - Easy drinking at 'only' 12.9%ABV, though perhaps not as smooth as other highly rated coffee stouts.

Overall - A really good beer from Pure Project, though I personally prefer the Holy Mountain King's Head - Bourbon Barrel Hazelnut Coffee.

Opaque, dark brown pour; initially thick, light brown head, recedes to a thin yet lasting presence; nice rings and fingers of foam residue inside the glass. Incredible aroma; roasted grains and nuts, very intense. Huge flavors of milk chocolate, fudge; roasted hazelnuts; grain char and coffee ground bitterness; vanilla; muted bourbon undercurrent. Unbelievable body and mouthfeel; slick and deeply viscous; chewy and oily.

I can't recall how long it has been since I've rated two or more BeerAdvocate beer rating categories '5', but the smell, taste and mouthfeel of this beer unequivocally merit these scores. If the initial head (relatively huge for a big beer like this one) would have easily been a 4.5 (in my book). But, hey. It's the beer and how it impacts you that counts. For me, the incredible density (smell, taste, mouthfeel) and complexity (smell and taste) and a near singular dark beer drinking experience marks this beer as a world-class experience. And, yes, I truly wish I would have bought more than a single bottle of this beer.

REALLY nice full mouthfeel.
Not too sweet or boozy.
Hazelnut is done well.

Batch 2. Pours black. Nose is chocolate, hazelnut and vanilla. The bourbon definitely comes through. The taste is amazing - chocolate, hazelnut, figs, prunes, coffee, and bourbon. Mouthfeel is thick and creamy. Overall amazing!

Having the vanilla variant side by side with the regular. The regular surprisingly tasted like the vanilla last year on tap. Both renditions have a slightly lower ABV but not noticeable in body. Preferred the regular. The hazelnut and chocolate were in balance. Great character can't ask for much more. Surprised how much the vanilla variant added unnecessary vanilla and I'm a vanilla fiend.
