Presenting the fourth in our new series of core stouts, River of Truth. We added organic Shantawene coffee from Sidamo, Ethiopia (roasted by our friends at Mostra) and organic Sri Lankan coconut to this imperial stout, resulting in a cascade of aromas including coconut, marzipan, and chocolate mousse. Flavors of espresso fudge, macaroon, vanilla wafer and black treacle flood the senses amidst a full body and velvety mouthfeel.

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing nearly opaque black in the glass with just a few khaki bubbles and some floating islands that are probably coconut. Only a thin string of bubbles around the glass. Aroma of dark toasted malt, milk chocolate, coconut, vanilla and vague fruit esters; inviting. Flavor is dark toasted malt, vanilla, coconut, mild coffee and dark chocolate; similar unidentifiable, but intriguing fruit notes in the finish. Medium bodied with light to moderate creaminess and satisfactory carbonation, despite near still pour. Quite the fruitiest stout I can remember. There are no distinct fruit notes, but more like the complex, estery fruit character of a mixed candy box (thinking gummy candies and chocolate covered fruit). Oddly, not getting much coffee at all, the chocolate and fruit from the malt are more distinct than the faint coffee. Seems like it should be more muddled than it is, the flavor is quite nice, although not typical of coffee stouts. Not a looker, but flavorful and great to drink; very appealing aroma on pouring.

Excellent body, nearly black, opaque; what head there is fizzles away quickly; tiny flecks of yeast sediment float on top of the beer. Very pleasant smell; dark chocolate and roasted grain; coconut sweetness. Great flavor; milk chocolate and coconut; light trace of coffee; bourbon-like note into the finish. Heavy body; smooth, thick, and silky.
While the appearance is disappointing, the taste and mouthfeel are outstanding. More coconut than coffee is present.
Pouring temperature: 53 °F; bottling data: 11/03/21
