Our newest Cellar Cyndicate exclusive bottle is inspired by the beloved Blenheim apricot—a disappearing delicacy here in California—and Winslow's time living in Santa Cruz. This spontaneously fermented ale was aged for a year total—first in a red wine barrel, then in another red wine oak barrel from Hungary that we selected from our Lief program and racked into a custom-fitted puncheon especially for the Cellar Cyndicate. The puncheon was topped off with a load of organic apricots from B & R Farms in Hollister, CA, a fourth-generation family Blenheim apricot enterprise. At eight pounds of apricots per gallon of beer, this brew comes in just shy of a 1:1 ratio of apricots to beer. The result is an ale as golden in color as the fresh fruit it was brewed with. Shining through a soft acidity, subtle oak tannins, and bold essences of stone fruit are aromas of preserved lemons, Asian pear and funk that intermingle with flavors of kumquat, white grape skin, subtle red wine and oak.
