Uncovered Roots, our captivating purple imperial stout, is now available in cans! Featuring ube as its star ingredient, the recipe for this beer was masterfully created by our QA/QC Manager, Nate, who was inspired by the delectable purple desserts of his Filipino heritage. Uncovered Roots invites you to explore a world of flavors all within one extraordinary stout—combining organic ingredients from the Philippines, Indonesia, and Peru, along with a Brazilian and Colombian coffee blend from Steady State. It boasts aromas of coconut macaroon, ube cookie, and chocolate wafer; every sip unveils tastes of ube jam, baker's chocolate, and freshly brewed coffee. As a brew that was designed to bring people together, we encourage you to crack one open and share this unique purple-colored beauty with family, old friends, new friends, and everyone in between.

Can poured into a Mountain Rambler Brewery snifter
A: Pours dark purple, with a frothy pastel purple head that settles to a light layer and leaves a little spotty lacing.
S: Coffee, toasted coconut, earthy char, dark chocolate, spicy pine, vanilla, slightly nutty notes from the ube, and brown sugar sweetness.
T: Roasty, fresh coffee, dark chocolate, a touch earthy, solid hit of vanilla, underlying spicy pine, soft toasted coconut and a little nuttiness from the ube come out as it warms, and some brown sugar sweetness.
M: A touch on the fuller side of medium body, moderate carbonation, soft and creamy, but lighter than you'd expect from a 9% stout.
O: This one threw me at first from the pour where it came out of the can a kinda transparent purplish grey before darkening in the glass. After a second of thought it clicked. This must have started as a blonde stout that has been tinted purple from the ube, which would also explain some of the adjunct additions. It's super unique and fun to try, but I don't think that it would be the first can of theirs I would grab if I saw it again.

Had Uncovered Roots poured from pint can, label stamped Canned On: "12/2/24," into nonic pint.
Pours deep, opaque purple, but transmitting a good bit of pint light at the edges, where lots of floating ube particles, I guess, can be seen, with 1-finger of light purple head, with excellent retention, leaving thick rings of (light purple) lace down the glass. Nutty and fresh citrus aromas off pour, with citrus aroma continuing. On tasting, begins with moderate chocolate and mild continuing nutty flavor (ube), over a thick almost milkshake body, with a little hop bite, and a bit of sweet citrus, which carry into more than a little warming alcohol, and very mild roast coffee, for a crisp, fruity, somewhat peppery, still chocolate, but not too sticky finish.
Probably among the top 3 craziest beers I've ever had, but unlike the other two, very drinkable, with a surprisingly sustainable finish, despite the heavy yam infusion.

App: purple lavender, transparent. Minimal head retention and lacing. The color is outstanding and unique. Deceivingly clear.
