White Elm Red Velvet Imperial Pastry Stout, 12% ABV. Pours black with a one-finger brown head that left no lacing. Nose is sweet cake, cherry, and chocolate. Taste follows, moderately sweet, slightly bitter. Decent mouthfeel, if a bit thin and overcarbonated. Overall near-world-class.

I've only tried a handful of Red Velvet beers, and half have been good, half have been bad...
But I have confidence in White Elm to do it right.
This is a 16 oz can, no date, poured into Southern Grist Mini Willie Beecher.
The appearance is something of beauty. It's unlike anything I've seen in a beer. It is literally the most perfect rendition of Red Velvet Cake in beer form. As I snap the tab, a bright red bleeds around the lip. As the beer is poured, light hits the nearly black pour giving it streaks of ruby. The body forms a chocolate cherry color - there's deep blacks, rich browns, and black cherry. The head is reddish-pink, maybe the color of cherry juice. It's exquisite.
Aroma picks your nose up and slams it into confection land. It smells like it's going to be way too sweet, but I'll find out soon. Sugary cherry frosting and rich moist black forest cake flood the nostrils. There's hints of dark berries and dark berry syrup. A bit of smooth fudge tags along. All of this, wrapped up in a powdered sugar blanket. I'm trepidatious.
Flavor, in proper stout form, brings roasted malt first. Shades of coffee and earthy hops are here and gone in a blink, whisked away in favor of sweet black cake, dark berry syrup, and pink frosting. It is a bit sweet, but it's not as sweet as say, their Double Stuffed. It closes on an earthy note both from roasted malt and hops. Lingering sweetness hugs the cheeks and lies buzzing on the tongue.
Feel is a tad thinner than expected, but not shabby when considering the amount of adjuncts used here. Alcohol heat is low-lying and could belly crawl under trip wires. A dangerous ninja this beer, and will likely be gone in no time. Lingering roast, buzzing carbonation, and slight heat remain on the finish.
Overall, a pretty awesome stout and one i'd highly recommend. It's a sipper due to its sweet nature, but if you're a sweet stout fan there's not much about this you won't enjoy. My biggest gripe is the thickness or lack thereof, but I'm over it already.
