a neat beer, looks really dense from the tap, raw and unrefined, thick and cloudy, rusty colored with a decent white head, looks almost sloppy really, but the aroma and the flavor are excellent, unconventional for the style and frankly unexpected. its got a dried floral thing, almost a dandelion sort of pollen and bitter thing going on, tea-like in that way, but also interesting notes of red apple and dry spices, some rye maybe in the mash, and definitely some fluffy wheat, lots of expansive body here. white pepper and clove notes, lots of dry cereals, dried apple, even a saffron sort of thing, i would love to know more about the recipe, i cant quite place what i taste. hoppier than many too, light citrus and a vegetal greenness to it at the end. rustic and different, a cool clean belgian type yeast profile seems about right, and while this drinks pretty sturdy and could probably use a little tidying up, they did a nice job with it and it stands out as quite distinctive to me. id love to get into some more beers from interboro...
