Inspired by one of our favourite cocktails, this beer was soured with our house lacto culture, then aged on lime zest and American oak infused with whiskey and angostura bitters.

Serving: 650 ml bottle poured into a 2 dl tulip glass.
Appearance: Hazy amber gold with a modest head of white foam.
Smell: Lime zest, slight farmyard funk and some vanilla and cinnamon.
Taste: Bright lime zest and lactic acid nicely balanced by sweeter barrel notes of oak and vanilla.
Mouthfeel: Light body, slightly oily feel and moderate carbonation.
Overall: An unlikely mix of citrus, barrels and bitters that works well and drinks like a big gose.

Hazy orange-straw color. Poured a short head that was gone in half a minute. Low flow of tiny bubbles rising from the bottom of the glass with some larger bubbles on the side of the glass close to the top. Left no lacing.
Light smell of stonefruit, slightly sweet while also slightly sour. Tiny amount of sour funk, with a hint of barnyard. Swirling the glass kicked up a stronger sour funk followed by sweet stonefruit. Overall quite light scents.
Initial taste of sweet stonefruit with a light tart. Followed by a strong taste of eating fragrant flowers. Mellows out with a strong citrus flavor. A hint of cinnamon. The aftertaste starts with a strong Earl Grey tea, but made with some citrus fruit adjacent to bergamot. The black tea and the citrus seem to separate into distinct flavors with a light bitter coming through in the tea portion. Again the hint of cinnamon. Never tasted anything like whisky.
Light mouth tingling. Medium-low carbonation level. Hardly any foaming. Slightly astringent after the aftertaste had faded.
Interesting flavor profile. Evolves into several distinct bands of flavor rather than an overall blend. Didn't even notice the cinnamon until halfway through the first glass. The astringency came as a bit of a surprise, like a little dust had been tucked up between my cheeks and gums.
