IMPERIAL STOUT WITH RUM & TAHITIAN VANILLA

Extremely dark and nearly eleven percent, we pushed the limits of our brewhouse to create this intense beer. Boiling for hours to concentrate the flavours and sugars, this Imperial Stout also features Tahitian Vanilla beans extracted in house using barrel-aged rum, which provides sweetness and balance to the bitter roasted malt character. Age or drink fresh.

A- This pours out of the can a dark chocolate brown color and has a texture that resembles a slightly used motor oil. The head is deep caramel in color, and rather fizzy, dissipating in record fashion, becoming nothing more than a relic of fizz around the inside of the glass. There is also no lacing to speak of when this is given the gentle swirl. I also cannot see what the overall carbonation is like, however, I'm venturing to guess that it could be aggressive based on how quick the head disappeared before my eyes like an age old magic trick!

S- This has a rather sweet aroma, with chocolatey aromas, both dark and milk, with fresh vanilla bean pod, warming pure extract, cafe au lait coffee, vanilla toffee creme filling, some sweet dark sipping rum, along with some sugar cane juice, and finishing with more typical cocoa powder, black coffee, burnt toffee/molasses and some charred Earth....nice aromas overall!

T- Quite nice and very surprisingly mellow for the style and alcohol percentage! Very smooth vanilla and creamy milk chocolate are the primary flavors presented here, but HOLY is there a bitter cocoa, almost metallic flavor that hits the back of my tongue! This must be the chocolate and/or black malts used perhaps here? Once I get used to this flavor, rummy char shows itself more prominently, with dark roast coffee bean, subtle burnt toffee, and yes, the alcohol begins to show face as it warms!

M/O- Medium bodied and the carbonation is actually a lot softer than I thought it would be. A decent sipping brew and the more I have of it, the nicer it becomes.....the drinkability factor would be limited to this single can I am enjoying, as it would surely hit you in the head the more you enjoy. Perhaps would pair well with a heavy lamb or beef stew. I'd have it again....

Appearance - Pours a dark cola brown with two fingers of foamy tan head.

Smell - Roasted malts, bitter cocoa, coffee bean, vanilla bean, hint of rum and molasses.

Taste - Upfront with bitter roasted malts (cocoa, coffee bean), followed by earthy hops. Rum is detected more in the finish. Vanilla is subtle but pleasant.

Mouthfeel - Medium to full bodied with moderate carbonation. Warming sensation from the alcohol. Slightly sticky.

Overall - A nicely roasted imperial stout with complementary flavours. I wish I knew more about the kind of rum in this brew, but it adds a nice finish.
