Cloudy yellow-tan color. Poured a short head that dropped back to a patchy skiff in seconds. Too cloudy to see the carbonation level, but there are a lot of bubbles stuck to the side of the glass. Left small patches of lace.
Strong smell I can best describe as sour and "fuzzy"; it tickle-burns the nose like a mild pepper or some other spice. Sweet pear and a lighter apple. There is some other strong funky-sweet smell that I cannot describe. Light oak, or some other hardwood. Swirling the glass kicks up a much stronger funky-sweet. There is a very light horse blanket for a couple of seconds.
Strong tart to the point of mild pucker. Very strong funk. A light pear and apple, with more pear than apple. There is a light sweetness once I get used to the sour. A hint of something hot and spicy. Just a trace of bitters. The aftertaste is an explosion of pear, apple, and sour funk. The bitters pop out. The hot and spicy gets much stronger as well. This is very bitey if if gets near the windpipe. Swallow with caution; be in the moment.
Light tongue tingling. A bit spicy. Heavy body. Very little foaming. There is a bit of nose and sinus burn after swallowing. Feels a bit astringent with the aftertaste. Left my teeth feeling a bit etched.
Very interesting beer. There are some odd flavors similar to other wild ales I tried, but this one seems to have found a unique funk without any comparison. Surprising burn. Not a casual sipper; I had to be focused every moment it was in my mouth in case it attacked me.
