Kaixo came to us as a culinary challenge from our friends at Baso and we accepted. We were challenged to make a Basque-inspired apple beer which is not a common endeavor so of course we dove head first into this new adventure.
Kaixo (pronounced kai-shoh) means “hello” in Basque. Kaixo a rice lager kick-started on koji mold and then brewed with aromatic Kanzi and Pink Lady apples. On the tongue. it has an earthy, crisp finish with subtle notes of ripe apple on the nose. If you liked Kaizen White, you should definitely try Kaixo.

Added in the Fruit and Field Beer style, as I think it represents this better than saying it is a Rice Lager.
A: Pours a bright pale yellow color. With a touch of haze. A white head forms to about two fingers, with good retention and lace.
S: The aroma is toasted malts and bread. Tart apples, light funk. Really enjoyable.
T: Again, a very nice toasted malt and baked bread flavor up front. Apple skins, tart ripe apples. Just a touch of funk. Again, I'm really enjoying this.
M/D: A light body, with crisp carbonation at first. That smooths out, with a nice dry finish. I can drink a lot of this.
Really unique, but also very good. The two don't always mix. I definitely get the Basque Cider quality here. Highly recommended and well done.
