way cool beer here, super clever and fairly priced, an oak aged mixed culture golden sour type, refermented on sauvignon blanc must. a little clearer in the glass to me than this sort of thing generally is, and it holds a short half inch of big bubbled white head, well carbonated beer which is flattering in this style. it smells and tastes mature, acidic, and vinous for sure, i get sauvignon blanc specifically which is cool, i get a lot more bacteria than funk here, relatively clean, some light lemon funk and a little isovaleric thing, but its snappy too, and very little from the grain, a belgian pils malt type base could be all, doesnt taste or feel full enough to be built on wheat, but it could be there, just broken down by the acid. notes of green pear, also chardonnay, dried herbs, and emergent brett as this warms, some light white vinegar sharpness, but its almost refreshing at the same time that its super piquant. light citrus here, plenty of oak, even a faint vanilla note. very little from the grain, but the water chemistry comes through as mineral forward and drying to me. straw, white peach, and summery white wine to close along with a little barnyard funk and increasingly intense acidity. fun beer, too sour to drink a ton of, but i appreciate the effort and these kinds of beers existing here. fun stuff, the second wine type like this ive had from them, likely to age favorably!
