Demiurge is inspired by the classic Mai Tai cocktail, a deeply refreshing blend of light & dark rums, orange liqueur, lime juice, and orgeat. To recreate these complex flavors in Demiurge we brewed an extra thick Sour Double IPA with wheat & malted oat, adding milk sugar & blackstrap molasses in the whirlpool, pineapple and lime puree during fermentation, and almonds during the cold conditioning phase.

This likely could be incredibly unique or a disaster. The pint can's contents fit inside a clear glass Imperial pint mug, as there was no head. It's opaque, yet brightly yellow-orange. It's pretty close to being the color of pineapple-orange juice. The pineapple is certainly there for the nose. The lime and almond are right behind it, with a clue that this could really be sour. It's definitely tart, close enough to being sour. The lime rises to being a major player in the taste. The other flavors are there too, save the molasses. But, that is probably adding to a wonderful mouthfeel and a balance with the hops and soured fruits. What lacing and what eight percent ABV? Neither are noticed. What is noticed is a unique sour ale taste that drinks richly, yet lightly and smoothly. This might be a good example of lactose being included in a beer for the better. Maybe it's the lime, but there's a salty aspect to the finish that dries it out. This is way closer to a treat than a disaster.
