one of my favorite beers we had in here, a spelt based clean saison with foraged sumac, a cool idea for a beer and nicely executed like all of their stuff is. weird name though, i think that has something to do with the male anatomy, kind of gross sounding, but the beer is wonderful. a pale golden thing, minimal hazy and very sunny, with a short white head, but better carbonated than a lot of them were in here. the sumac is delicate, floral and with berry notes, sort of red and bushy to me, polleny and a little tart, but this isnt wild to me, its a cleaner belgian type saison that has fermented this down to near dry. to me the spelt imparts an almost rye character, earthy and dry like that, not quite as spicy but serving to make an otherwise very basic malt complexion somewhat interesting. i like the rustic nature of this even without a more wild yeast complexion, the sumac seems sort of native american or something, tea-like, and distinctive, while the spelt makes this more than just another pils and white wheat saison. i could see this killing it with some really mature brett, but i like it a lot as it is, faint white wine and white pepper as it fades out with the sumac, nice and dry and fizzy, great beer for this time of year!
