Brewed like an ale but with the pieces and parts of pilsner, The original brewers of Kolsch had to make several concessions to get their hybrid beer to taste a certain way. And that way is perfectly fine with Mild Wide Beer as well.
Light gold and brilliantly clear, Cathedral is a Kolsch-style beer that tips off with a creamy and stark white crown. With a grainy-sweet scent and a hint of floral and citrus hops, the nose carries a light and delicate bouquet of perfume and fragrant grasses Gentle to the taste, the beer's malt-forward upstart carries onto the tongue with the suggestions of honeysuckle, fresh bread and cereal grain.
While remaining plump with malt character, a sharper hop flavor begins to rise to balance the lingering sweetness with a pleasant and herbal grassiness of lemon pepper, lemon grass and hints of mint. A late fade of grain character leads to a drying late taste that showcases the hops further with a slightly bitter finish.
Medium bodied for pilsner-types of beer but certainly light for most ale, the beer may be somewhat schizophrenic but has a clear direction with a refreshing finish and a brisk, dry sense of drinkability. With a little more character and heft than your average light beer, Cathedral is just shy of the palest of ale as well.
