Brooklyn Quintaceratops started life as a batch of our "prehistoric" quadrupel-style ale called Quadraceratops. Having paid homage to a traditional Belgian beer style, we decided to juice it up further with another excellent historic drink: old-school Caribbean rum. And by old-school, we mean full of sugar cane, funk, and earth, the way rum tasted centuries ago. Luckily, a handful of distillers still hold fast to the old ways.
Months in Trinidadian rum barrels and a victory lap in American bourbon barrels rendered the beer deeply funky like the rums of old, with flavors of tobacco, volcanic soil, and molasses. The first sip might raise your eyebrows, but like some other funktastic foods and drinks, Quintaceratops rewards the intrepid drinker with a wild ride.

Purchased at the Bevie for $25 for 750 ml corked and caged bottle. This beer could have been unreal. The appearance, smell and mouth feel were all near perfect. The smell especially is wonderful, with a pungent combination of cream soda and bourbon. Unfortunately, the taste was a real letdown, with apparent chlorophenols creeping in and ruining what should be a stellar BA Belgian quad. The level of medicine/band aid is pretty low - not enough to justify a drain pour, but for the price, I expect a flawless beer.

Pours dark brown with a 2 finger beige head, with good retention and lacing. The aroma has pears, apples, bourbon, rum, brown sugar, and dark fruit.
Has a sweet taste with pears, apples, bourbon, rum, dark fruit, brown sugar, and molasses. Light hop bitterness to keep the sweetness in check. There is no taste of alcohol. It is not easy to hide 10.9 % abv, but Brooklyn managed to do it.
Medium to full bodied with average carbonation.Nicely made and well worth buying again..

At the intersection of where tradition and exploration meet is where this beer places our tastes. As the time-honored techniques of Belgian strong, dark ale; rum making; and bourbon distilling all converge, the ale slumbers first in rum barrels and then bourbon barrels for a fully saturated and boozy barrel flavor matrix.
Deep in bronze and burgundy, the ale casts a supply haze upon the eye and its mid-statured froth thwarts a vibrant bouquet of richness, earthiness and spice. Candied dark fruit, hard candy, cola and sasparilla play boldly on the nose while its sweet is equally as candied- seemingly fruit cake-like with its dehydrated and condensed fruit sweetness and is firm cakey texture.
The spices rise to prominance quickly over the middle palate, bringing with it the strong boozy spice of barrel and spirits. Meanwhile the sweeter, richer malt taste begin to dissolve, leaving its fruit flavors to develop aged and savory character. Plumb turns to prune, grape to raison as date and raisin develop a depth of richness achingly of fresh-pulled tobacco and soft curing leather.
But in the end, the spice and booze wins out- turning this rich and decadent flavor spread into a challenged character that's remiss of cough syrups and palate numbing chloroseptic-like medicinal taste and feel. Its full body is no match for that lacquer-like burn that stems from those brazen barrels.

I liked the mouthfeel and approachability of this quad and would have liked to share a growler with a dozen craft beer newbies, but they didn't pack my growler! chocolate malt, smooth mouthfeel.

Poured from a 750 ml corked bottle into a Brooklyn chalice.
Appearance: Pours a dark brownish black with a lot of bubbles. Huge three finger tan head which slowly settles into a thin creamy layer.
Smell: A rich and pretty sweet Belgian quad style aroma with big hints of rum, whiskey, and dark fruits. Upfront barrel presence with a big scent of rum along with some bourbon whiskey, vanilla, and oak. Sweet hints of candied Belgian sugar. Belgian yeast with some peppers, cinnamon, and slight clove. Sweet malt hints of caramel and toffee along with some straw and biscuit. Big presence of fruit esters with some cherries and banana along with dark fruit hints of raisin, fig, prune, and plum. Also some hints of coconut and hops. A really nice aroma.
Taste: Like it smells, a pretty rich and sweet Quad style taste with big notes of rum, whiskey, and dark fruit. Big barrel presence with sweet notes of rum along with some bourbon whiskey notes of vanilla and oak. Belgian yeast with some pepper, cinnamon, and clove. Sweet taste of candied sugar and molasses. Toasted malt with notes of caramel, toffee, straw, and biscuit. Fruit notes of cherry, apple, and banana along with good dark fruit notes of raisin, prune, plum, and fig. Subtle earthy hop bitterness. A very good Quad taste that is sweet but not overwhelming.
Mouthfeel: Medium bodied with a high level of carbonation. Creamy, silky, and somewhat syrupy. Mild alcohol heat but still pretty smooth.
Overall: A very good twist on a Belgian Quad. Good combination of rum, whiskey, and fruit flavors with a smooth silky body.
