exquisite wild beer right here, something really complex and different, process intensive steps rewarded! also, i feel like if anyone else made this beer, it would be 6 or 7 percent abv, but in typical brooklyn fashion, the abv is sneakily and almost oddly high for what this is. a neat belgian saison type as a base, not particularly interesting from a grain perspective, but it doesnt need to be with how nuanced and compelling the yeast is here. i get a ton of oak right away in the nose, sharp tannic white wine, and a soft but very mature brett, going really well together. the wine is strong in the flavor, and it surely tastes high quality and fancy, almost more fruity than oaky, which is saying something because there is a ton of wood on this, absolutely. i like the partial wine yeast referment, it dries the beer out gorgeously, and adds a neat wrinkle that both highlights the belgian aspect of this and is a wonderful compliment to the fruity brett in here. there is a bit of a pucker, but a lot more funk than acidity, some lemon tang in here too at the end. champagne flavors meet with champagne effervescence, and this one really sings on the palate. impressive depth here, awesomely well hidden strength, a natural and vinous funky character, and a obvious inventiveness and quality that stands above a lot of others in the category. its beers like this that make brooklyn one of my favorites in the game! if you can find one of these, treat yourself. also, this is sure to age splendidly!
