Inspired by the layered joy of a Mexican hot-chocolate, our decidedly grown-up tribute is aged for a year in tequila barrels. Judicious additions of ancho, guajillo, and toasted habanero chiles, cinnamon, and four vanilla varieties (Mexico, Peru, Tanzania, and Comoros) complement flavors of rich fudge and lightly roasted coffee. The heat of the chiles is present, but subdued, allowing each facet of this beer to shine.

Pour at The Dark Arts Feestival 2026. Near black pour, ring of beige foam. Boozy aroma, roasty, tequila, spicy. Tast follows with the peppers becoming more pronounced, blending well with the tequila, all held up the nice roasty base. Strong

Draft at Chuck’s Hop Shop

A- pours jet black with a one finger creamy white head that reduces to a ring

S- tequila, roast, chocolate, light cinnamon and peppers

T- tequila barrel is prevalent up front, followed by a hit of roast and sweet chocolate. Mid-palate gives some light cinnamon with more tequila barrel. The finish gives sweet chocolate, cinnamon and some pepper that adds a nice throat burn on the linger

M- medium body with moderate carbonation, foamy mouthfeel and warming finish

Aroma is licorice , vanilla custard, banana pudding , whiff of bourbon

Taste is licorice , cinnamon, cocoa, green Chile ( taste but minimal heat), gentle spiciness on the finish

Mouthfeel is light, soft, fizzy , the 11.2% abv is well hidden

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing nearly opaque black in the glass with a half finger dark khaki head with great retention and nice lacing. Aroma of dark toasted malt, vanilla, cinnamon, milk chocolate and a little hot pepper. Flavor is dark, lightly toasted malt, milk chocolate, green and chili pepper and light vanilla. A mild fruitiness and agave spice from the tequila, cinnamon surfaces in the green and chili pepper, chocolatey finish. Medium bodied with light to moderate creaminess. The Mexican chocolate style stout seems popular this winter. This one has great Mexican chocolate character, but with more spicy fruit notes from the tequila, which also enhances the perceived green pepper notes. The malt body is flavorful, but leans more towards an imperial porter style to my taste. I'd go for a little more malt depth, but this is still very nicely balanced with the chili a clear note, but not overly hot or dominant. Considering how busy Mexican chocolate is and adding tequila barreling, this turned out remarkably smooth and enjoyable. Nicely done.

I received this outstanding imperial stout as a 2020 holiday present and it's definitely the best mexican stout I've ever had. The chiles had the perfect presence, the vanilla and cinnamon was well balanced, and the 11.2% abv wasn't really very noticeable. A lovely experience sharing this with my sons for the holiday!
