Notes via stream of consciousness: It's poured a hazy golden body beneath a short head of white foam. The aroma is unusual. The honey is clear, and it's grassy, grainy, and wheaty, a little bit fruity, and there's also something almost a touch smokey about it. Oh, wait, this is a Belgian-style beer so maybe there's a little bit of a burnt plastic phenolic note to it. I think that must be the case. It's an interesting and perhaps enticing aroma but I wouldn't exactly call it welcoming. It's not off-putting, but it's not welcoming. On to the taste then, the honey remains, which is great. It's honeyish, sweetish, malty, and then wheaty, grassy, a little bit fruity with apple and a suggestion of red berries, and then phenolic with some burnt plastic and a light spiciness. It's not that bitter so it does finish with some residual malt but it's not cloying. A honey beer should be a touch sweet, right? In the mouth it's medium bodied and gently crisp. Overall it's an interesting and enjoyable beer but in the end I think it could have been produced a little bit better. I know that's hard to do when working with honey so I give them credit, and I'm going to see if I can get a hold of a few more of their beers to try tomorrow.
