Brewed with 100% corn grown and malted in Indiana. Fermented with native bacteria and our house brett culture.

Had on tap. Cloudy orangey yellow body with a pinky of fluffy white foam. Nose has the rustic corn meeting wild funk, brett, citrus peel, and dry earth. Taste starts with orange and lemon and minerals, with wild funk and corn as the second wave, finish has more and more brett as it warms. Feel is light but never thin, playfully wild, has textures from corn and yeast prominently but nothing disturbs the gentle nature. This was pretty much exactly what I hoped it would be.

a delicious brett fermented grisette with malted white corn in it, i have really never had anything quite like this, lots of unique beers in here for sure. this is sort of hazy honey colored in the glass, with a big tall white head on it from the tap. aroma and flavor of really earthy corn, i get it for sure, sweet for a moment, then like the field itself, soil and minerals and starch, super interesting, a cool malt for sure, really defines the beer. the yeast is also really interesting, with a light belgian ester in it, a sort of lemongrass note there, and then the bretty funk, which is light and maybe a little new still, but adds a cool musty funk that goes great with the flavor and texture of the corn here. its also really nicely dried out in the end to the extent that its almost even refreshing, especially for a beer with so much going on. not much hops here, but i dont miss them at all. i kind of always thought this style had to include some rye, and i dont think this one does, but its really not wanting for anything in my opinion. incredibly unique beer showcasing a cool ingredient really well. i loved our time here, and this beer was one of my favorites i had while i was in.
