this is really good pils, european in style, but american in freshness. we never seem to get the imports in this style in their best shape, the time and the trip just dont work well for these most of the time, so its nice to have a pretty classic example of the style here but with at the brewery freshness. its golden and crystal clear with a rather dense white head on it, the bartender wrestles with the foam for a little while before handing over my glass. really sexy beer, his effort was worth it. maybe a bit more hops to this than is customary, but the hops complexion, and the rest of the flavors here seem authentic and old school to me. the lager yeast has done its job and appears ready for more, its crisp and lively and crackery and bright and apparently highly efficient. grassy and limey notes to the hops, later kettle than some of the classics i would think, but light on bitterness until the very end when it starts to dry out. the malt is fresh and light, flavorful but delicate, just right with the other elements. high level carbonation, a soft mineral profile, and a clean finish, just a little more body than many. overall this is a super flavorful take on the style, old worldy but way fresher than anything from there that we get over here, and from a technical standpoint, it was without a doubt the best of the three beers we had here at temescal!
