The second of our 2021 releases, this complex barrel aged beer was refermented on 100kg of beautifully juicy and painstakingly hand-cut Niagara peaches. Lots of fresh peach vibes and funk in this release:

AROMA: complex barnyard funk, fresh peach
APPEARANCE: gold, pale soft white foam
FLAVOUR: sour fuzzy peaches, ripe stone fruit, lemon rind, subtle grape popsicle + balsamic
MOUTHFEEL: champagne-like, intense, full, bone dry
PAIRINGS: cheesecake, funky cheese, duck, mussels

Our Wild Construct series explores the order and chaos in nature with an ever-evolving line-up of 1-2 year aged wild ales, carefully blended with fruits/adjuncts that complement the unique characteristics of each barrel.

Shelf-life: Can be aged for years at cellar temperatures.

Served in a teku glass

This beer pours a golden hue and has a haze to it. It is topped with a scant, tan head that disappears quickly leaving no trace.

Amazing sour and funky aroma with the peaches adding a nice sweetness to the smell.

Wonderful sour peach flavor. Funk and acidity dance across my palate like Raygun breaking in Paris.

Thin bodied with a dry mouthfeel

This is a damn near perfect sour for me. Very sour, funky, fruity, delicious.
