473 mL can from the LCBO; dated Oct 1 2025 and served slightly chilled.
Pours foggy and translucent, its pale golden-hued body capped with more than an inch of soapy, bubbly white head that falls back over the next three or four minutes. A tight band of even lace about half an inch thick clings to the glass afterwards, with a modest collar of frothy suds surrounding a patchy cap; looks normal enough. Light citrus on the nose, including lemon, grapefruit and lime, as well as hints of wheaty, grainy malts and floral hops.
It's not bad. Grainy pale malts, wheat and crackery sweetness form the backbone, with citrusy hops making up much of the rest of the profile. Lime and grapefruit, with hints of lemon rind and grassy, herbal hops on the back end; just a touch of earthy bitterness that doesn't last long, leading into an off-dry conclusion. Light in body, with assertive carbonation that remains prickly throughout the session; this easy IPA makes for some easy drinkin'. Crisp and very crushable.
Final Grade: 3.78, a serviceable B+. Donnybrook is a pretty decent light IPA with no real attention-grabbing features. Arguably better than Cowbell's old Gravel Run session IPA - or at least, I'd argue so, as I prefer Donnybrook's citrus-heavy hop profile. However, at the end of the day, there are few session IPAs that I drink on a regular basis, and there's nothing about this one that makes it likely to enter my rotation. Worth a try if you're in the market for a light IPA.
