this is extraordinary, maybe my favorite beer from our visit here this year, which really is saying a lot because they all slay. this is a mixed culture type wild brew cofermented on whole cluster pinot gris grapes in clay and oak, super ambitious and super well executed, real unique. i have seen their amphora vessel on the property when you had back to the restroom, now finally tasting a beer from it. the pour is golden sunset orange with a brassy shine, lots of bubbles, and just a short white fizzy head from the tap, not quite clear, a little body evident to it, could be some minerals from the clay too giving this density. aroma of tannic white grapes, pears, dandelion heads, green pea, and raw wheat, along with a little honey, neutral oak, and just a whisper of a white pepper ester, high summer vibes here, wish i was a pollenator to land on this thing. the grapes are awesome with this fermentation profile, good funk, high tone esters, tangy grape skins, wild saison character. a hint of lime in the taste, green apple too, white wine, especially as it warms and the oak comes out, it gets quite piquant then too, but has enough grain support to feel balanced and not overly acidic. its no all that delicate, i think owing to some wheat body and the clay vessel, which i like a lot in here, a wet earthy property with a richness thats quite distinct. awesome beer overall, very unique to this brewery, one of their most quintessential beers so far in my experience i reckon, not to be missed! the cofermentation with the grapes is sick.
