Notes: Once upon a time on a trip to Bamberg, at the base of limestone cliffs overlooking the Danube, brewers Bill and Hagen came upon a fairytale-like brewery. There, they drank one of the best dark lagers they ever had. Here is Dovetail's version, inspired by the monks— it delivers a rich and chocolaty roastiness.

Pours a fairly large frothy off white 1+ finger head with med retention, touch of lacing, hazy auburn to copper brownish color

Nose sweet caramelized malts, biscuity toffee, little chocolate and coffee, a little dark fruit fig like, little toasted bread crust

Taste more rich malt, biscuity, toasted bread crust, mild caramelized sugar and toffee, light chocolate, some dried fruits, light bitterness, little herbal floral hop, drier soft finish

Mouth is med bod, med to a bit higher creamy carb

Overall solid dunkel, hits everything it should and soft enjoyable

Typical copper brown body with a huge tan head. Smell and taste are clones: bready malts with toasted caramel, cocoa dusted fig, and expressive german yeast with a kiss of fruit ester. Sneaky complex all within a light and drinkable body that never lets up the maltwork, very smooth yet sturdy in a delicate way, frothy on the backend. The wife liked it

16oz tallboy can poured into Saint Sixtus goblet

Appearance: Mahogany to light brown bodied beer with a red hue around the edges. Off white head that pours thick and creamy. Sticky lacing that coats the glass.

Smell: bread crusts, fruity yeast, and light brown sugar / candied sugars.

Taste: Starts of with a light brown sugar sweetness then quickly transitions into the main flavors of fruity esters and gentle notes of dark fruits. The beer finishes with a hint of fruity yeast and bread / bread crust.

Mouthfeel: medium bodied beer with medium carbonation. Carbonation is creamy. Carbonation is perfectly dialed in. Very drinkable brew. Crisp and clean finish in this rich flavored yet extremely smooth lager.

Overall: A traditional and authentic example of this beer. Extremely well done by Dovetail. Just like all the other beers they brew. Beers like this is what keeps me returning to Dovetail for more.

A 2018 draft version was excellent. A four-month old can in 2021 was very slightly sour, and not nearly as good. My ratings are an average of the two.

New batch is much better than I remember it.
Dark reddish brown, lasting head and lacing.
Lightly earthy, toasted malt, slightly nutty aroma.
Taste is similar, pleasant toasted nutty malt with a dry finish.
Smooth and moreish, ligth carb level, soft feel.
Overall this was nice and I had to have another.

2017 3.74

Bright auburn with sharp clarity, foam has a creamy surface texture, spotty lace.

Subdued aroma, slightly grainy with a mild toastiness.
Taste is mild and toasty with a light nutty malt character.
Light bodied with moderate carbonation, smooths out over time.
Overall it's pretty good, though sort of mild and clean for a dunkel.
