Say it with us: "PILS" -- not Pilsner. A lot of people have asked over the years, "Why don't you make a Pils?" Well, this not quite German-style, not quite Czech-style Pils is the result of 8 years in the making...

On Lukr tap at The Owl Farm in New York, NY.
This one pours a clear brilliant yellow color, with a big fluffy head, and lots of lacing.
This smells quite crackery, with biscuits, lemon, and spicy/herbal hops.
This is really outstanding, and poured perfectly. It’s got a really creamy and herbal flavor to it. There’s lemongrass, pine needles, and biscuity and crackery malt. Everything is super well balanced, in perfect proportions.
This is medium bodied, super creamy, with a clean bitterness on the finish.
It’s really hard to not enjoy this one.

Pours a slightly unfiltered straw color with a fluffy white head that lingers and provides a decent amount of lacing. Beautiful Pilsner.
The nose is led by a substantial lemongrass aroma, and there’s a spicy herbal note as well as crackery malt note.
The taste is led by the lemongrass, and there’s a spicy, earthy flavor that is more peppery, which provides a nice balance along with the cracker flavor. Delicious.
The mouthfeel is on the lighter side and very crisp. So drinkable, this is truly a delightful Pilsner.

Lightly foggy yellow-gold with a very densely compacted whip cream white head of moderate height, cleaning in a gently wobbly ridge as if paper cut by a fine razor.
This has a stop you in your tracks hop expression that's very unique. Almost like lavender, yet not soapy, while also hinting at amaretto, but also crisp and dry. Its herbality comes near to astringent, while there is minimal malt expression.

07/24/24. Poured into a Samuel Adams Perfect Pint.
A: Slightly hazy light yellow with 2-3 finger white frothy head with good retention and copious lacing.
S: Minty menthol hop aroma with herbal and lemon undercurrent that moves to plastic and rubber. Malt is pretty light.
T: Flavor has mint, lemongrass, and lighter floral lavender notes that moves to medicinal, bandaid, and plastic phenols.
M: Crisp and lean with light body, moderate carbonation with some creaminess, and dry finish.
O: I doubt this is what they intended.

Ok, second stop of the Midwest 2024 reunion Memorial Day week. Some dive bar in Chicago across the street from Thalia Hall that reminded me of Paddy's on It's Always Sunny. Baseball was on and the bartenders were cool. While all the pro wrestling nerds stood in line, I went in and had like 4 pints before the show. Nerds. And I still got to meet Danhausen.
Anyhoo, pours standard pilsner yellow. 1/3" white head on tap. Aroma was standard pilsner malt up front and light Saaz hopping in the back.
The taste delivers all the hallmarks of the pilsner style, light barley golden waves influence indicative of the pilsner barley style. Has a firm bitterness in the mouthfeel with a light lemon rind, dandelion and pine taste impact. Light bodied and crisp mouthfeel. Carbonation on point. Long live old small towners, old school haggard and hank. This is the kind of beer that you can crush in Chicago or on a back road in the middle of howhere and be completely taken care of.

Mostly clear yellow body with a full white head, plenty of bands of lacing. Aromas of floral hops, black pepper, bready yet pale yeast and mild grain. Bitter pale now more piney hops with bready yeast, mild grain, crisp malts and a hint of lemon and black peppers. Feel is clean and crisp, decently full bodied too while staying light and somewhat pale. The wife liked it.

Canned 6/7/24
Hazy yellow, with a short lived white head.
Soft mouthfeel, breast, floral bitterness with a resinous lingering. Quite enjoyable. Nice to have a US made pils without the overpowering citrus/lemon that one hers have.
