Zoigl is a tradition of beer made in the Oberpfalz region of Bavaria. For hundreds of years, small towns in this area have housed communal breweries—together, they will brew, and then the wort is given to individual brews to ferment in their own home. Once the beer is ready, a sign with a six-pointed star—the Brewer’s Star—is hung outside the home, letting townspeople know it’s time to drink.

Most Zoigl breweries have a kühlschiff (coolship). At Dovetail, we employ our coolship for all our of beers, however, it’s used in place of a whirlpool, to separate trub from wort. The wort leaves the coolship still at a sterile temperature, and is further cooled in a heat exchanger, to ensure that bugs stay far away before the yeast is pitched.

For this beer, in the tradition of Zoigl brewers, we left the wort in the coolship on a cold winter night and came back the next morning to pitch the yeast. This golden-colored lager is meant to be enjoyed as fresh as possible.

Windischeschenbach in a glass.
Multiple servings from a wood-barrel lined gravity keg on 2 occasions.

Saturated brassy gold, ample head and sheets of lacing.
Honey drizzled biscuits and fresh crusty bread in the aroma.
Similar flavors of honey drizzled biscuits and fresh bread, with an unfiltered yeastiness. Smooth supple feel that is so fresh and sublime, medium bodied with a light natural carb level.

Overall this was a special experience, possibly a one-off and not to be duplicated, according to the brewers. It spent the night in the coolship at a safe temp, and meant to be consumed as fresh as possible.

Served off of a gravity keg.

Pours a semi-cloudy golden-yellow color. Thick fluffy white head dissipates steadily leaving a thin layer of foam and some sticky white lacing on the glass.

Aroma has notes of sweet grain and bready malts. A hint of spicy earthy hops peeps through.

Taste has notes of grain, sweet bready malts, spicy hops on the finish. It trends more bitter than might be first expected, but is incredibly balanced. This is one of the best tasting lagers I’ve ever had - it’s vibrant, fresh and flavorful.

Feel is medium to full bodied for a lager. Really carries some heft that fit nicely with the bready malts. Mild, gentle carbonation. Semi- dry slightly bitter finish.

Overall a hell of a beer from dovetail. I can only describe it as this: it tastes like you’re drinking this in the old country. Lovely flavorful lager - a must try for anyone.
