Our 2nd limited-edition special release — a boundless beer that's never been done before and defies the style guidelines; part Dovetail lager, part lambic-style spontaneous, born of wild Chicago microbes, the spirit of experimentation, and a firm trust in nature. Sure, ok, and then you take a sip and it's a lovely, easy drink — a gentle sour with notes of vanilla and memories of the oak barrel that aged it. You'll want to share it, pass it around the back porch or the fire pit, and offer a toast to the wild yeasts of the City in a Garden.

Unlike anything I have yet, so that's a big plus right off the bat. Putting the wild into wild ale, the feel has touches of lambic sour and funk especially on the finish, but has a bready and robust body, giving a very smooth and heavier wild ale body, unique. The smell features vanilla and oak in a big way, but then has lager grains, biscuit malt, green apple, hay and funk as well. Taste brings in some mineral earthiness to the background as well, and crisp and acidic lemon to the finish. Just thought this one was really cool. Pairs perfectly with charcuterie and raclette

Bottle at Dovetail Brewery, Chicago, IL
A: The beer is slightly hazy light yellow in color and has a faint amount of visible carbonation. It poured with a short white head that left patches of bubbles on the surface and a narrow collar around the edge of the glass.
S: Faint aromas of sourness and funk are present in the nose.
T: The taste follows the smell and as a little stronger amount of funk and sourness with additional hints of oak and associated vanilla.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: This beer is quite palatable for a spontaneous fermentation lambic-style beer as the oak barrel aging really mellows out the funk.

Tasted in a Rastal Teku from a 500 mL bottle on July 25, 2018. A unique lager lambic-style hybrid. Lightly sour with hints of vanilla and oak. Initially a little tart but finishes smooth and creamy. This beer is exceptional.

Knowing what you are getting into, this is a very good beer. Mild funk well balanced with the traditional lager and oak flavors. Well worth trying if you are a fan of wild ales.
Edit: Revised my review after having my second one to bump up my scores. It’s just a very well done beer for all the elements involved.

Bright saturated gold, plenty of lacing. Soft crabapple aroma, gentle acidity.
Light tartness, crabapple, green pear and apple, lingering oaky vanilla.

Super easy drinking, it most resembles a jonge lambiek.
According to the brewer, this is 99.9% Dovetail Lager inoculated with a very small amount of their lambic-style spontaneous beer while in the barrels. Pretty interesting stuff!
