Exclusive to Bottles & Cans in Chicago, IL. A two-barrel blend of our spontaneously-fermented beer made in the Lambic tradition; for a holiday twist, we used darker malts, instead of pale ones, in addition to the unmalted wheat.

Cloudy brown/purple appearance; champagne bubbles throughout.
A slow pour yielded a nice khaki head; decent lace.
Balsamic vinaigrette, sea salt & tart peach notes in the nose.
Sour peach, sea salt, mild balsamic vinaigrette & faint oak flavors.
A bit abrasive; not sure the polluted Chicago air is the best conduit for the style. Wish I hadn't bought a second bottle...

Dark reddish amber brown, ample off white foam that fades to a thin ring and broken surface skim. Bright clarity, not as dark as an Oud Bruin, but not far off either.
Musty oak and acidic berry aromas, some dry tobacco leaf.
Crisp acidic tartness, cranberry and crabapple, lactic and malic acids. Trace apple cider vinegar. Lighty malty and traces of dry oak in the aftertaste. Lighter feel, crisp and effervescent. Very easy drinking with an easygoing tartness and refreshing character. Overall it’s an interesting spontaneous wild ale, the cranberry element gives it a fun holiday character.
