A single barrel of our traditionally-made, spontaneously fermented beer aged for 9 months on apples plucked from 100-year-old trees on the orchard of Uncle John’s Cider.

Had on tap. Cloudy yellow with a ring of white foam. Smell has a good bit of funk to it, with golden apple, hay, earth, oak, and barrel funk. Taste brings in some barnyard funk, golden raisin, and acidic grape too, with plenty of funk and wood adhering to the apple, causing a little vinegar too. Feel is a little heavy and full for style, but good flavoring.

This tied with Tilquin Pinot Noir as the crowd favorite, also beating out Dovetail Framboise.
Golden orange with a bit of haziness, ample foam that leaves spotty lacing in the glass.
Fresh apple aroma, fruity with crisp malic acidity, and mild oaky barrel funk.
Natural tart apple, crabapple, mild cheese rind, light oak in the dry finish.
Tart and crisp, balanced and very refreshing. The freshness of the cider apples come through.
A little lighter than their recent spontaneous beers, it really lends itself to food pairing and summer drinking. For fans of Basque sidras like Istategi, Sarasola, etc.
2020 release: extra funky, more so than their other spon beers. Turned out great. Will age one and see how it is next year.
