Formerly Elderflower

We've bottled the last of our 2019 batch of Fleur de Sureau (only previously available on draft), an elderflower-infused spontaneous beer. We picked a delicious single barrel of 2-year aged spon beer and steeped fresh, local elderflower in it for 3 weeks.

A friend of ours brought us a bunch of fresh elderflower from a forest reserve he manages; we added it to a 1-and-2 year blend of our spontaneously-fermented beers. Elderflower is said to open up doors to fairy worlds.

Saturated golden orange, lightly hazed, compact head.
Complex aroma of wildflower, apple, bell pepper, dill, ample oak.
Tart crabapple, lemon, citrusy acidity. As it warms up, floral and pepper notes emerge.
Light phenolics from the elderflower, dry oaky aftertaste.
Medium bodied with moderate acidity and balanced spritzy carb.

Overall this is an excellent spontaneous beer from Dovetail, high marks.
