A 3 barrel blend of 1 & 2 year spontaneous beer. Refermented on 150 lb of Cabernet Franc for an additional 6 months. Grapes were grown and harvested by Heringer Estates in Clarksburg, CA and sourced for us by our friends at VIN312 Winery.

Cellared a year and half. Rosy orange body with a white head, visible carbonation, actually it was audible when the cork popped off. Bretty and barnyard funk with vinous grape, oak, subtle floral tones, and light black currant. Taste is much the same but more bitter with some hay. Feel finishes more dry than most by DT, really wonderful in that way, carb is a little high, sourness is at a great level though and acidity is barely there. Really nice lambic, one of the better in the series. Paired great with a wet spring day and stilton

Reddish orange, slightly hazy, ample head of fluffy foam that billows above the rim, and settles to an unbroken skim. Arcs of lacing in the glass. Aroma is fruity with a slight mineral note and ample oakiness.
Bitter tart grapefruit rind, very tannic, some Bretty cheese rind funk as it warms. Creamy texture, fine carbonation. The bitterness builds and lingers, while the initial dark berry fruitiness is fleeting. It’s unique and interesting, though the bitterness tends to dominate. Overall I enjoyed it, and will try the next batch for sure. Thanks to Aaron for this one!
