On tap at Dovetail, 2020 vintage
With some time to kill in Chicago before my flight, I just had to stop at Dovetail again, as they impressed me last time. They have a decent selection of spontaneous beers on tap and this one was really calling me. Let’s see what it’s all about
Pours a cloudy gold with 2 fingers of off white head that slowly fades to a thin cap and leaves minimal lacing
This has a massive amount of funk in the nose, balanced out by subtle tart fruit. I’m picking up on aromas of wet hay, petrichor, white wine vinegar, blue cheese, sharp oak, red currant, jammy raspberry, and leather
It is only slightly less funky in taste, but still quite aggressive. On the front end of the sip I’m tasting leather, sharp oak, red wine vibegar, tart cherry, red currant, lemon yogurt, straw, and bready malt. The swallow brings notes of blue cheese, sharp oak, white wine vinegar, red currant, lemon juice, leather, and wet hay
A light medium body pairs with moderate carbonation, resulting in a sharp and zesty beer. Finishes bone dry and funky
This goes down easily despite the immense amount of funk present. Good stuff

Light golden-orange color. Nice white sudsy head. Aroma is super funky with some nice fruity notes of red currants. Taste is tart, fruity, with notes of lemon, currants, and some blue cheese. Currants come through nicely. Dry finish. Light, vibrant carbonation. Delicious lambic.

Draft at the brewery for the Secret Garden event, FOBAB 2021 weekend. Served in a stemmed Dovetail teku glass.
Faintly reddish orange, slight haze of particulate fruit matter, thin layer of foam and spotty lace.
Aroma of sour red currants, some herbaceous tomato vine and acidity from the base beer. Very expressive fruit character, natural and unique. Tastes moderately sour with a lasting herbal tomato vine and dry tannic bitterness. Accurately representative of the fruit, red currants come through in a big way. Overall, it’s a successful fruited spon beer, fruit forward with nice depth of flavor. Thanks to Thomas & Jenny for sharing!
