A refreshing, low-alcohol (3.2%) sour wheat beer for the hottest of summer days; pale, lightly hazy, and effervescent, water cracker malt and a gentle minerality showcase its lemony-tartness and Greek yogurt tanginess. The addition of Brettanomyces, which were found in older Berliner Weisses, will bring added complexity to the beer with notes of pineapple and hay as it ages.

Like all of Dovetail beers, we employed traditional methods into making our Berliner Weisse—it's a single-decoction, coolshipped, and open-fermented. But it also features some new-to-our-brewery methods, based on both historic recipes and inspired by the Berliner-based breweries who continue to brew this beer. So, for the first time, there was a hop mash. And, there was no boil. We also introduced a new water profile to our brewery—one based on Berlin's water, which is harder than the Pilsen profile we usually use for our beers. That's neat for us.”
