About 18 months ago, we took the Saison we brewed back then, threw it in a gin barrel from our neighbors at Koval and let it do its thing until now. The result: The bright floral and citrus character of London Dry-style gin harmoniously echos off the spicy Belgian yeast character of the Saison. Our most cocktail-y beer to date. Super-duper limited.

Amber tone, sudsy skim with a flecked halo of spotty lacing.
Juniper and lemon peel aroma, pretty gin forward.
Boozy and botanical, juniper berry, lemony tart. Lasting herbal bitters in the finish. Medium bodied, softly carbed, somewhat oily, it rolls over the palate.
Overall this is a cool experiment, very gin forward and like a strong cocktail. 7.5 is an estimate per the brewer, feels a bit higher for sure.
