2/17/26 - (Dovetail Brewery) (Chicago, Illinois) Draft Notes: 16.9 oz draft pour into a Willi Becher glass at the Brewery for $8.75 plus tax. 5.7% ABV, 28 IBU, 4-6 EBC, CO2 5.1 g/L. Built on the same double-decocted mash, Smoked Vienna layers in cherrywood and beachwood smoked malts for a deeper expression of Vienna Lager - like fresh pretzels pulled from a wood-fired oven.
Appearance: 0.5 liter pour into a Willi Becher glass, yielding a beige bronze unfiltered base, and an egg white thin tiny bubble head leaving a generous lacing and cover over the base. 4.0
Aroma: Faint smoke aroma, wood, vegan. 3.5
Taste: Fuller flavor strength, cherry through the wood, caramel, fresh baked pretzel sans mustard. Solid. 4.0
Mouthfeel: Sustained gentle carbonation, malty, mild smoke level, but what comes through is nice. Lightly dry, leans sweet, caramel cherrywood finish. 4.25
Overall: This is a nice smoked beer I’d peg for an introductory offering for smoked newbies, based on the lighter touch compared to other Dovetail offerings. I do like what I’m getting, and would order in the future when wanting a mellow easy smoke beer. 4.0
