A decocted, naturally carbonated, step mashed German pilsner with Noble Hops. Named after our head-brewer’s first daughter, Penelope is our interpretation of a perfect German pilsner. Decoction mashes introduce a more rich, layered malt presence we’ve only tasted from centuries-old German lager recipes.

What a juggernaut. Humble took the gloves off and brewed a traditional German pils with a well thought out bite.. Those familiar with offerings from over the pond should enjoy this. Not a hint of dichloroacetic acid. Soft dough, slight lemon, slight oil finish. More full bodied than other SF bay area pilsners(which I'm familiar with). Up there and better than the Dovetail and Goldfinger offerings from Chicago, which are stunning on their own. Noble hops are on display. Those looking for biting hops may need to look elsewhere. Delicate and a great comparison to German style top tier offerings for those looking to find their place. What a treat. Its the perfect balance between old school and new school. A New Glarus fan in northern wisconsin would be all over this, which is all you can ask for. Prost!

A mildly hazy light yellow with a dense, white head with great retention and lacing. The nose is a soft German pilsner, delicately doughy with light dust, earth, mint and lemon, softly and cleanly fermented. The palate opens crisp, clean and lightly bitter with lemon and earth. The mid-palate has soft dough, delicate and lightly bready. Limpid. Drying, bitter, mildly oily finish. Quite excellent.

Possibly the best example of a German pils I’ve had outside of Germany. The brew is nearly perfect. Classic, cloudy, straw-yellow appearance, sudsy with sticky lacing.
The aromas are oh-so bready and biscuity, with a zesty citrus note that anchors the bouquet.
Hoppy and crisp on the palate - the brew JUST borders on a WC style/German style pils. Suggestions of coriander and lemon pith towards the finish, which is crisp and refreshing.
An absolute knock out lager. Seek this one out if you can.

Humble Sea seems to have some sort of magic lager god hidden away there. Most of the beers I have tried from them have been good, great, fine. This pils is utterly and distinctively god like. Liquid baguette. Tiny amounts of floral and with malt-y, biscuit-y, bread-y goodness. Try this with shortbread cookies. Look is pale and golden , little darker than your average pilsner. Smell is malt-y, shortbread biscuits, floral, a tad bit of honey, spicy. Taste is golden crust of French bread cascading on your tongue, a bit of bitterness, balance and a bit of sweetness. It is dry, but not too dry. Crisp, got some pine forest in there. Great mouthfeel, a bit more viscous than most pilsners I have had. Love this beer. Absolutely love it.

Smell: malt, bread, German hops, floral.
Taste: malty, Biscuit, honey, flowers, just a hint of crispness. Touch of pine.
Smooth and medium bodied and dry.
Overall: a step above the rest in the lager/pilsner category. Just a little more fresh and clean than most. Not too thin. Not overly hopped.
I recently read beer was liquid bread, and this is a perfect example of fresh sweet bread or French bread.
