Hopless IPA No hops! Only science + Phantasm
Got thiols? What exactly are thiols you ask? They are highly aroma-active compounds found in many different plants including hops and grain as well as precursors present in grape must. We’ve gotten creative and found a way to create an IPA with intense tropical fruit flavors and aromas with zero hops. With the addition of a new product from New Zealand, Phantasm. It is a product derived from Marlborough Sauv Blanc grapes and is loaded with thiol precursors. We combined it with an experimental yeast from Berkeley Brewing Science with certain active enzymes to enhance the thiol production. To aide in some balance with some bitterness we brewed it specifically to pick up tannins (normally unwanted) to give it just enough bitterness to make it feel like an IPA. The result is a total fruit bomb with huge notes of fresh passionfruit juice along with big white grape character.
